Composition of this wine: 40% Merlot, 30% Corvina, 30% Croatina

THE VINIFICATION
The very core of Romeo & Juliet range, Passione Sentimento Rosso is a blend of Merlot, Corvina and Croatina. The grapes, selected and hand harvested with great care, are then left to dry for 1 month into wooden trays in the Fruttaio. Due to this drying process, the grapes lose around the 30% of their water content and gain high sugars concentration. The vinification process takes place in separate steel tanks at controlled temperature of 25-28°C for 20 days. Maturation in large cherry barrels (at second use) for 3 months. The single wine varieties are then blended and malolactic fermentation follows to harmonize and soften the wine.

THE STYLE
Vibrant ruby red, hints of cherry, plum and spice characteristics. Rich, warm, lusty and complex, with soft, velvety tannins and a powerful structure. A great accompaniment to a rich Risotto as well as to slow cooked meats and mature cheeses.
